Recipe: Pomegranate Gumdrop

Pomegranate flavor typically appears only in old cocktails, like the Jack Rose, from before when grenadine became some sort of space-age science project with atomic red dye in it. However, having picked up some Pama Pomegranate Liqueur for some Champagne cocktails, pseudo Jack Rose cocktails, and other experiments, I started wandering further afield with the flavor combinations and came up with this new cocktail using the natural pomegranate flavor in Pama along with soju, a relatively low proof spirit from Korea.
The result is a tart little pink candy cocktail, just in time for Valentine’s day.
Pomegranate Gumdrop
1 oz. Pama Pomegranate Liqueur
2 oz. Jiro 24 Soju
1 oz. lemon juice
1 oz. rich simple syrup (a 2 to 1 sugar to water ratio)
Combine ingredients in a shaker.
Shake ingredients sharply with ice.
Double strain into a cocktail glass.
Depending on the tartness of your lemons, you may need to add a little simple syrup to taste.
For a slightly more bitter variant, try lime juice, instead of the lemon.
