Recipe: Remember the Maine

We often turn to whiskies for cocktails to take some of the chill off of the Winter months, and even though this Winter has been far milder than most, it’s no exception. Typical favorite cocktails are the Manhattan and the Sazerac, but other less familiar ones bear trying as well.

The Remember the Maine recalls the rallying cry following the mysterious explosion of the U.S.S. Maine in Havana harbor on 15 February 1898. First named in Charles H. Baker’s 1939 guide “The Gentleman’s Companion”, it is an inviting cocktail, slightly sweeter than a Manhattan.

Remember the Maine
2 oz. Rye (we used Sazerac 6yr.)
3/4 oz. Sweet Vermouth (we use Cinzano)
1/4 oz. Cherry Heering
Absinthe, for rinse (we used Pernod)
Marasca cherries (we used Luxardo)

Rinse chilled cocktail glass with absinthe.
Combine ingredients, except for absinthe and cherries in a mixing glass.
Stir ingredients gently with ice.
Strain into a cocktail glass.
Garnish with cherries.
